I don't claim to be a gourmet cook. I like easy recipes with few ingredients and preparation time as necessary. I have created these for my family,and happily share them with you. Hope you enjoy these family favorites -- Caroline

Potato/Leeky Soup

Good for a cold winter day. Serves 3-4

Ingredients:

  • 2 leeks
  • 6-8 medium red potatoes
  • 2 cups non-fat chicken broth
  • 1 cup sour cream
  • 2 tablespoons butter
  • Salt and lots of pepper

    Cut leeks into 1/2 inch slices, taking care to clean each layer. Cut potatoes into 1/2 inch cubes, leave skins on if desired. Cook in broth until potatoes almost done. Add sour cream, butter, salt and pepper. Cook slowly for 12-15 minutes and serve.
  • Chicken Enchiladas

    Spice up you life! Serves 3-4

    Ingredients:

  • 2 cooked chicken breasts, cubed
  • 1 Large Can Green Chile, enchilada sauce
  • 1 Can diced green Anaheim chiles
  • Grated cheese (cheddar or mixed okay)
  • 1 dozen corn tortillas

    Pour 1/4 can green sauce in bottom of large oven proof baking dish (9x11 or so) Layer 6 tortillas, then 1/2 chicken, 1/2 green chiles, more sauce, then 1/2 cheese. Make another layer, 6 tortillas, remaining chicken, sauce, green chiles, and cheese on top. Bake at 375 for 20-30 minutes until bubbly.
